Wine Description

Aroma Fruity aroma of peach, citrus fruits, quince and hay.
Color Pale yellow with greenish reflections
Palate Full-bodied, fresh with a champagne-like acidity and surprisingly fine perlage.
Overall result This wine was made using the predecessor method of the champagne method. During fermentation, the wine was bottled and allowed to continue fermenting there. The sparkling wine has finesse and nuances and is balanced. It has a very high potential to evolve in the bottle.
Match with Small appetizers such as shrimp skewers, with marinated cuttlefish or bacalao a la plancha. It is also a real treat on its own as an aperitif.

Luis Gutiérrez, Robert Parker's critic for Spain writes:

"The Cava Taïka 2014 was made after a partial fermentation in oak barrels using the traditional method of bottle fermentation, now known as pet-nat, and aged on the lees. It is a blend of 50% Sauvignon Blanc and 50% Semillon, which is enriched with potential ABV of 12% It is rounder than the 2013 and has full aromas of properly ripened grapes It is bone dry with high acidity and an extremely low pH It is aromatic but lacks the typical notes of Sauvignon Blanc.It feels just as good as the traditional or champenois method of sparkling wines and has very integrated and small bubbles that give it texture.It has finesse and nuance and is balanced, with youth and energy to stand out in the bottle.It has a saline finish.This is the style of the house: pure, elegant, balanced, clean and crystalline white wines.It has been aged in bottle for six years. This is an ancient sparkling wine that is unique. It should develop well and last a very long time. 3,700 bottles were produced. He was disgorged in February 2020."
