Aroma Aromas that come from the yeasts that have been in contact with the wine for more than 15 years: fine pastries like crème anglaise, marzipan, brioche. They are joined by hints of stone fruit like apricots and some spicy notes like white pepper. Balsamic notes like fennel, rosemary and laurel round off the overall impression.
Color Golden colour with deep golden rims.
Palate The entry is fresh, with surprising finesse of carbonation. Silky, unctuous, yet fresh and remarkably lively.
Overall result It is characterised by great expressiveness and a resounding character due to the long maturation. It is an expressive, elegant, carbonated wine with a creamy, velvety texture.

Luis Gutiérrez, Robert Parker's critic for Spain writes:

"The superb 2006 Enoteca Brut Nature comes from an excellent vintage that was very warm. It was made from 60 % Xarel.lo and 40 % Macabeo from their Font Jui winery (which is mentioned on the label) with 12 % alcohol, a pH of 2.97 and no residual sugar, sharp and dry. It matured in the bottle on the lees for 180 months. This long time in the bottle creates small bubbles that give the wine a velvety texture. It is very expressive, clean, complex and nuanced, with slightly nutty notes, hints of yeast and bread dough, balsamic and with Mediterranean notes of fennel and esparto grass. It is long, dry, tasty and finishes with a light chalky note. It is also available as a brut on request. It is a little better than the 2004 I tasted last time. It is still unclear whether the 2005 will ever be sold. 1,800 bottles were produced."
